Built around a 22-seat table and an open show-kitchen, Dawn is a stage for menus that shift with the season and the occasion. Guests might find themselves at the table where a new Dusk dish is still being worked out, or seated for a one-night collaboration with a visiting chef or brand.

THE STAGE
At Dawn, the kitchen is not hidden away. The same open show-kitchen where Dusk’s ferments and concepts are developed sits at the centre of the room, so your table can watch a dish take shape rather than simply arrive on a plate.
Because Dawn doubles as Dusk’s development kitchen, menus here are never static. What you eat might be a dish still being tested for the main restaurant, a one-off built around your event, or a collaboration created for the night with a visiting chef or brand. Wine, like the menu, is chosen for the room and the occasion rather than pulled from a fixed list.
It is Dusk’s philosophy of seasonality, fermentation, and storytelling, brought into a single room built for twenty-two, and shaped entirely around whoever is seated at the table.
The Gathering
