A New Chapter
Fine dining was always, at its origins, à la carte. There is something deeply considered about choosing your own path through a kitchen’s repertoire — each course a decision, each dish a statement of intent.
It is this kind of reflection that has led Callan Austin and Darren Badenhorst to open a second door at DUSK. From 1 July, the restaurant that built its name on an immersive multi-course journey now offers guests a parallel experience: a concise menu of classical European dishes, reimagined through the same lens of local provenance, deep fermentation, and relentless creativity that defines the DUSK kitchen.

A Different Freedom.
Think Beef Wellington with morel porcini farce and smoked Bordelaise. Duck dry-aged whole for fourteen days. Crayfish ravioli made with hens’ yolks from a neighbouring farm, swimming in a bisque many hours in the making. These are not shortcuts to fine dining — they are an invitation to experience the DUSK kitchen at its most technically precise and pleasurably indulgent.
The à la carte menu sits alongside the tasting experience as an equal sibling — distinct in format, but identical in ambition. Both are delivered with the same exceptional wine service, the same warm and unhurried hospitality, and the same deep respect for the guest’s time at the table.
